Molasses Crinkle Cookies
Molasses is a byproduct of sugar production: the juice from the sugar
cane is repeatedly boiled to promote sugar crystallization. The third boil
yields the blackstrap molasses most people know, with its dark color and
robust flavor. Molasses is also used to make brown sugar by adding it to
refined white sugar. In this cookie the molasses takes the foreground,
backed by a variety of spices to give a well rounded cookie with a soft and
chewy texture.
